Recipes for Cooking, that use honey

By using recipes that include honey as an ingredient, we may promote the use of honey in cookery and educate beekeepers in how to use a portion of their crop.

Credit is given where the source is known, but generally these recipes have appeared in various beekeeping magazines and newsletters. They are in no particular order, but when a large number have been gathered they will be sorted into categories.


Pick Me Up Cocktail

Ingredients
Dessert spoonful of honey
Juice of one lemon
Juice of one orange
the yolk from one raw egg
4 Fl Oz cold water

Method:-

shake together well, A Table spoonful of Brandy, Rum or Sherry may be added, if desired.


Honey Fruit Cake

Ingredients(Metricated by DAC)
100 gm Butter
200 gm Self Raising Flour
450 gm Mixed Fruit
150 gm Clear Honey
5 ml Mixed Spice
3 ml Lemon Juice
2 Eggs
Grated Rind of one Lemon
Pinch of Salt

Method:-

Cream the butter and honey
Add the eggs alternately with sieved flour & mixed spice, salt, peel & juice.
Mix well adding the mixed fruit gradually.
Bake in a deep skirted tin that is 175 mm in diameter.
Bake for 2 hours at 130°C.
Leave to stand for four to seven days before attempting to eat.

Stuffed Turkey Breast

Ingredients
1 small breast of turkey
1/4 cup water
Dressing
1/4 cup honey
15 ml lemon juice
2 eggs (optional)
30 ml dried milk
1 cup chopped onions
3 slices sourdough bread or Soda Bread
30 ml chopped parsley
3 ml coarse ground black pepper
A pinch of sea salt
A sprinkling of chives

Method:-

Mix the dressing ingredients in a blender set at low speed.
Stuff the inside of the turkey breast with the dressing.
roll up the edges, and close with skewers.

Place the turkey in a baking tray with 1/4 cup of water.

Preheat oven to 180°C (350°F).
Bake for 90 minutes or until golden brown.

Heavy Pudding

Ingredients
5 fluid ounces milk.
1 Oz. semolina.
4 Oz honey.
1 Oz. butter.
Grated rind of a lemon.
Grated rind of an orange.
Half teaspoon of ground ginger.
2 eggs.
4 Oz. of breadcrumbs (wholemeal).
1 Oz. crushed ginger biscuits.
1 Oz bran

Method:-

Grate the rinds coarsely, cutting deeply into the white portion of the rind.
Crush the biscuits with a rolling pin.
Grease a one and a half pint pudding basin.

Heat the milk. Sprinkle in the semolina; stir well while cooking for 10 minutes.
Stir in the butter, honey, lemon and orange rind, ginger, egg yolks, bread crumbs, crushed biscuits and bran.
Whisk the egg whites stiffly and fold them into the mix.
Pour the mixture into the basin, cover with a cloth and steam gently for one and a half hours.

Not too bad for diabetics !


A 'Cup' is approximately 235 ml. A Tablespoon is 15 ml and a Teaspoon is 5 ml.
